My husband and I always joke that between the both of us we have 20 years of experience waiting tables. That's were we met, in a restaurant called Papa's Lil Italy. He was just a boy, a cute boy but just a boy. He was seventeen, soon to be eighteen. It was the beginning of the summer of 1996 or 97 when I started working at Papa's. Matt and I became friends quickly and even though I was attracted to him we were nothing more than friends because of the age difference. I was 21 and going out to clubs and bars and he wasn't even 18 so there you go. Not to mention that I was dating someone else at the time. This someone else left much to be desired but never the less, I was in a relationship. I suppose that's how Matt and I became such good friend, he nursed me back to smiles as my heart was being railroaded. Well, eventually Matt got fired one day and never came back to work. I was sad and wasn't really sure if I was ever going to see him again because I wasn't sure what his last name was. That's a story in itself! Eventually I ended up getting fired from Papa's and that was that. Not too surprising since I can proudly say I have been fired from many jobs. Stubborn I guess.
Fast forward a couple of years and I was living with my parents but I had my own phone line and one day out of the blue there was a message on my machine, yes I said machine. And guess who it was??? That's right, my Matthew! I was so excited because I really thought I might not ever talk to him again and talk about perfect timing, the man who left much to be desired was on the way out!!! So, I waiting a few weeks until I was done with my old business and I called him back and the rest is history!
So what does all this have to do with balsamic roasted chicken? Matt worked at a restaurant called Terra Luna and they had the most wonderful Balsamic Roasted Chicken, I mean it was TASTY!!!! So our dinner tonight and this recipe was inspired by Terra Luna's Balsamic Roasted Chicken. I did not pan sear the chicken prior to placing it in the crock pot but I will probably try that next time.
Crock Pot Balsamic Roasted Chicken
4-5 pound whole chicken
1 cup balsamic vinegar
2 tablespoon olive oil
1 large red onion
3 cloves of garlic
salt
pepper
Mix the olive oil and balsamic in a bowl and set aside.
cut the onion in wedge slices and place them in the bottom of the crock pot
season the chicken with salt and pepper and place it in the crock pot
spoon the balsamic mixture over the chicken making sure to cover the whole chicken
coarsely chop the garlic and put it in the crock pot
cook on low for 6-7 hours
*spoon the juices from the bottom of the crock pot over the chicken several times while its cooking
